Why is giving the queen more sensible here then falling back with it?

The moves are relatively similar. A queen move loses a full bishop (3 points of material). After ...Bxe2 Nxd7 Bxf1 Ne5 Bxc4 Nxc4 white has won a queen (9 points) for a rook and a pawn (6 points), or again 3 points of material.
By giving up the Queen, Black can capture a Rook and Pawn, but White's Knight will also be trapped, so for now Black is looking at the possibility of having a Rook, Bishop and Pawn for his Queen, which is a more reasonable outcome than being down a full piece.

Ideas of Qc2 will probably secure the advantage for White however.

To be honest, if faced with this position as Black, the best move would be to just resign. The game is over no matter what line you choose.
