I talk in the chatrooms sometimes,however,mostly with my friends.If my opponent has a question or something,i usually just respond or say "Good game"
There was a recently formed team that aims to chat after rapid or classical games in a post mortem, game analysis kind of way if that's of interest to you.

I will usually say 'thank you' at least , sometimes even when I lose. there's a button to write it out for me even!

The issue I think you might have is either: a) people leaving to go and play another game quickly, or b) them moving to the analysis board which has a separate chat room (or at least did the last time I was using it) which means they might miss the message.
I also don't mind chatting after a game. From what I have experienced so far it is a little bit more common to chat after playing a series of games against each other. Playing multiple games against each other could maybe be seen as a bonding process in the eyes of some people^^ At least I sometimes feel like that.

Timegod, I think you're wasting your time in paying attention to this topic. . . . I'm always up for chatting, but most of the time, I play anon-ly, so the available comments are only the four basic ones. I still use them, almost always, esp if the oppo has given me extra time. That earns a "TY." I don't get that function on the dumbphone and can't do the same, and I regret that. But 95 percent of the time, I'm the one who runs out of time, so it's not critical. When I'm signed in, I do like to discuss the game or even other things.

If you are playing against someone with child/restricted account and not see your chat at all.
Chatting after a chess game (other than saying good game and asking for a rematch) is a waste of time...
